Dijon Tilapia Fillets
MOUNTAIN STREAM
2 tablespoons butter
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1 1/2 tablespoons fresh lemon juice
4 Mountain Stream tilapia fillets
Salt and pepper
3 tablespoons fresh bread crumbs
Chopped fresh parsley, for garnish
1. Preheat oven to 450°F.
2. In a medium saucepan, melt butter over low heat. Add mustard,
Worcestershire sauce and lemon juice and mix well.
3. Season tilapia fillets with salt and pepper to taste. Place in a lightly
greased baking pan, leaving space between fillets. Pour the sauce over
the fillets and sprinkle with bread crumbs.
4. Bake for 7-8 minutes, or until just cooked through. Garnish with
parsley and serve immediately. Makes 4 servings.

Tilapia Tacos
RIO MAR
2 Rio Mar fresh tilapia fillets
1 teaspoon taco seasoning
1 tablespoon vegetable oil
4 flour tortillas
1 cup prepared guacamole or your favorite recipe
4 hard taco shells
1/2 cup ranch dressing flavored with 1 teaspoon ground cumin
1 cup shredded cabbage
1/2 cup chipotle salsa
1. Sprinkle tilapia with taco seasoning. Heat oil in a large sauté pan over
medium-high heat and cook fillets until they flake easily; leave whole or
cut into strips.
2. Spread each tortilla evenly with guacamole and wrap around a taco
shell. Place several strips of warm cooked tilapia in the shell and top with
1 tablespoon ranch dressing.
3. Top with shredded cabbage and 1 tablespoon chipotle salsa. Serve
immediately, with remaining toppings to be added at the table, if desired.
