Tomato Crostini
DARE FOODS
1/2 cup chopped yellow cherry tomatoes
1/2 cup chopped red cherry tomatoes
1/4 cup fresh basil leaves, finely chopped
2 garlic cloves: 1 finely minced, 1 cut in half
Sea salt and pepper
2 tablespoons extra-virgin olive oil
1/2 tablespoon white balsamic vinegar
12-15 Breton crackers
Basil leaves, for garnish
1. In a medium bowl, combine tomatoes, chopped basil, minced garlic, and
salt and pepper to taste.
2. Place olive oil and vinegar in a small jar, cover and shake to combine
thoroughly. Pour dressing over the tomato mixture and refrigerate,
preferably for 30 minutes.
3. Rub garlic halves over the crackers, then spoon on the tomato mixture.
Garnish each with a single basil leaf. Serve immediately. Makes 3-5 servings.
Variation: After rubbing crackers with garlic, place crackers on a cookie sheet
covered with aluminum foil. Spoon tomato mixture onto crackers and top with
thinly shaved Parmesan cheese. Broil just until the cheese melts, being careful
not to burn the crackers. Serve warm.
