Taquitos with Bean Sauce
DELIMEX
1 cup heavy whipping cream
1/2 cup refried beans
1/4 cup red chile enchilada sauce
4 thin slices ham
1/4 cup chicken broth
1/4 teaspoon ground cumin
18-20 Delimex Chicken or Beef Corn Taquitos
Shredded Cheddar and Monterey Jack cheese
1. Preheat oven to 400°F.
2. Place cream, refried beans, enchilada sauce, ham, chicken broth
and cumin in a blender or food processor and blend until creamy.
3. Place frozen taquitos in a 9-by-13-inch baking dish. Pour bean
sauce over taquitos.
4. Cover baking dish with foil. Bake for 20 minutes, or until
heated through.
5. Sprinkle with grated cheese and serve. Makes 4 servings.

Santa Fe Corn & Black Bean Salsa

1 15-ounce can S&W Black Beans, rinsed and drained
1 15 1/4-ounce can S&W Whole Kernel Corn, drained
1 14 1/2-ounce can S&W Diced Tomatoes, drained
1 teaspoon ground cumin
2 tablespoons fresh lime juice
1/4 cup chopped green onions
1/3 cup chopped fresh cilantro
1-2 tablespoons minced jalapeño pepper (to taste)
1. Combine all ingredients.
2. Serve with tortilla chips. Makes 12 servings.
