Avocado Fruit Stand Salad
HASS AVOCADO
1 pound European-style prepack- DRESSING
aged salad, any variety 1/3 cup olive oil
3 kiwis, peeled, cut in half length- 3 tablespoons raspberry vinegar
wise and sliced in half rounds 3 tablespoons chopped walnuts,
2 red or pink grapefruit, peeled toasted
and segmented 2 teaspoons grated lime peel
2 cups sliced strawberries 2 tablespoons fresh lime juice
2 large fresh ripe Hass avocados, 2 tablespoons chopped fresh basil
peeled, one cut into cubes, the other sliced into 8 portions 1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1. To prepare the dressing, whisk together all ingredients in a small bowl;
set aside.
2. In a large salad bowl, combine salad mix, kiwis, grapefruit, strawberries
and cubed avocado.
3. Just before serving, whisk together dressing and pour over salad.
Toss salad to coat with dressing. Arrange avocado slices on top.
Makes 4-6 servings.
