Normandy Blend Salad
2 cups Kirkland Signature Normandy Blend frozen vegetables
Yolks from 2 soft-boiled eggs
1/2 cup balsamic vinegar
1/2 cup olive oil
Salt and pepper
1/2 cup halved seedless white grapes
1/2 cup halved seedless red grapes
2 Granny Smith or other tart apples, cored and sliced
1/2 head iceberg lettuce

1. Heat frozen vegetables in a microwave at 50% power (defrost)
for 1 1/2-2 minutes. Drain well and refrigerate until ready to use.
2. In a bowl, whisk together soft-boiled egg yolks, vinegar, olive oil, and
salt and pepper to taste. Use immediately or cover and refrigerate.
3. Combine chilled vegetables, grapes and apples in a bowl. Add dressing
and toss well.
4. Place a layer of lettuce on each of 4 plates and top with the salad.
Makes 4 servings.
