Minestrone alla Fiorentina
with Meat Lasagna

Kirkland Signature Meat Lasagne
1/4 cup Kirkland Signature extra-virgin olive oil
1 large yellow onion, thinly sliced
1/2 cup finely chopped ham
1 small head savoy cabbage, shredded
2 ribs celery, finely chopped
2 garlic cloves, minced
1 sprig fresh rosemary
2 sprigs fresh thyme
1 15 1/2-ounce can cannellini beans

3 quarts vegetable broth
1/2 teaspoon cracked black pepper
Parmigiano-Reggiano cheese
1. Prepare lasagna according to package directions.
2. To prepare soup: Heat oil in a large soup pot over medium heat. Add onion,
ham, cabbage, celery and garlic; sauté until the vegetables are tender.
3. Add rosemary, thyme, beans, vegetable broth and pepper. Simmer for 1
hour. Taste and adjust seasoning as necessary.
4. Serve in soup bowls with grated Parmigiano-Reggiano cheese.
Makes 12 servings.
Tip: Add fresh rolls or baguettes from the Costco Bakery to complete this delicious
and easy-to-prepare meal.
