Michael Brando
Chef Michael Brando studied culinary arts internationally and has
achieved Master Chef status. Brando is now celebrating his 36th
professional year in culinary arts and is a gold and silver medal
winner in several international culinary competitions. During the
past 10 years, Brando has focused his culinary career in the area
of product development for both the food-service and retail
marketplace. Throughout that period, he has successfully
developed and launched several hundred innovative products.
Bacon-Wrapped Marinated Pork Loin
FARMLAND

1/4 cup soy sauce
1/4 cup packed light brown sugar
2 tablespoons dry sherry
11/2 teaspoons dried minced onions
1 teaspoon ground cinnamon
2 tablespoons olive oil
1 pinch garlic powder
11/2 pounds Farmland Boneless Pork Loin
8-10 slices Farmland Hickory Smoked Bacon
Wooden skewers or toothpicks
1. Combine soy sauce, brown sugar, sherry, dried onions, cinnamon, olive oil
and garlic powder in a large resealable plastic bag. Seal and mix together.
Add pork, seal and marinate in the refrigerator for 6-12 hours.
2. Partially cook bacon, rendering some of the fat, and drain. Wrap bacon
around pork and pin with water-soaked skewers or toothpicks to hold bacon
in place.
3. Preheat grill to medium-high to high heat.
4. Grill meat over hot coals until well done, approximately 15-25 minutes.
Cut into medallions and serve. Makes 4-6 servings.
