Anne Willan
Salmon Tartare
Anne Willan has 40 years of culinary experience as an author,
columnist and teacher. After studying and teaching cooking
in London and Paris, she made her name in the United States
as a food editor and writer. She founded Ecole de Cuisine La
Varenne in Paris in 1975, and since 1991 has directed its
programs at the Château du Fey in Burgundy and at The
Greenbrier in West Virginia. She has written more than 20
books on food. Her latest is A Cook’s Book of Quick Fixes &
Kitchen Tips, published in 2005 by John Wiley & Sons.
